Just a reminder… Rather than these weekly posts being viewed as a “meal plan”, I simply want them to be viewed as inspiration for dishes throughout the week. It might be inspiration for a dinner dish, appetizer, breakfast, lunch or snack! This week with back-to-school and busy schedules, I’ve lined up some easy dinners, as well as some great grab n’ go breakfasts and snacks. Hope you get some inspiration!
SUNDAY – Chicken w/ Fennel, Garbanzo Beans & Tomatoes // You all know how much I love a one pot meal. Less mess, easy clean up. The flavors in this dish are out of this world, it’s a must have for your menu this week.
MONDAY – No Bake Oatmeal Energy Bites // Yep, no bake! Easy, one bowl, nutritious and delicious! These little energy bites will get you through that busy morning or afternoon slump. Also a great option for school lunches!
TUESDAY – Instant Pot Split Pea & Lentil Soup // I don’t know about you, but half the time I forget to throw something in the slow cooker and need something last minute that’s quick! That’s where my Instant Pot comes in really handy. This dish comes together in 30 minutes, but tastes like it’s been cooking all day.
WEDNESDAY – One Bowl Carrot Apple Muffins // Looks like the theme this week is one bowl! I love these muffins, as do my kids. They’re easy to make and you can snack on them all week long.
THURSDAY – Mexican Lasagna // A huge hit in my house last week and every time I make it! This veggie based dish even has the meat lovers cheering! A family favorite for sure.
BREAKFAST/SNACK – Mom’s Best Banana Bread // My mom has been making this banana bread since I was a kid. It’s my all time favorite and she’s famous for it, and I guess now so am I. ☺️ Thanks, mom.
