I think it’s because there’s some fall dishes starting to sneak in, and you all know how I feel about fall! 😍 The first dish below, the butternut squash skillet… I made that for myself on my birthday last year. SUNDAY – Butternut Squash Skillet Pasta // Basically sweet cheesy heaven in a skillet. If you’re looking for the most perfect Sunday night comfort dish, you must give this dish a try! Don’t worry, I added some greens so basically it’s a health food 😉
MONDAY – Acai Cherry Smoothie Bowl // I’ve pretty much been making this smoothie on repeat for the last 3 months. It’s just enough sweet and perfectly tart. This smoothie is packed with antioxidants to help keep your body in check and will keep you full all morning long.
TUESDAY – Easy Fish Tacos // The week is well underway and you need something quick and easy for dinner. I’m obsessed with how fast these fish tacos come together. They’re fresh, light and full of flavor.
WEDNESDAY – Seafood & Potato Stew// Back to sneaking in some fall comfort food. This soup is like a big hug in a bowl. Healthy, filling and SO satisfying. A must for your fall menu.
THURSDAY – Smoky Poblano Pepper Salsa // Gearing up for the weekend and I always like to have something in my fridge to grab for snacking. This salsa is so fresh and delicious. I serve it with chips, on tacos, or throw it in the slow cooker or instant pot with some chicken to make easy shredded chicken! Make a batch today!
BREAKFAST – Sweet & Simple Crunchy Granola // You can’t go wrong with this sweet and simple granola. Especially with back to school here, it’s nice to have this granola on hand to use for topping yogurt, smoothies, or plain with a little milk. It might be a good idea to make a double batch because your friends will definitely be stealing some!
