Ah!! I’m SO sorry this meal plan is so late!! If you follow me on Instagram you know the major website issues I was having all week 😭 It was so frustrating, I wasn’t able to post anything! Thank goodness for now it seems to be back up and running, so before Sunday officially comes to an end (on the west coast) I wanted to post this meal plan for you! Weekly Meal Plan #16 is finally here! And it’s a GOOD one!
SUNDAY – Slow Cooker Turkey Meatballs // Everyone always thinks of slow cooking being so great in the cold winter months, which it totally is! But, it can also be great in the summer when you don’t feel like turning on your oven, or when it’s too hot outside to even grill! These turkey meatballs are my absolute favorite! They’re great over pasta, rice, zucchini noodles, spaghetti squash, or alone! This recipe makes a ton, so you’ll have plenty of leftovers, or to freeze for later!
MONDAY – Farro, Roasted Beet & Citrus Salad // I looooooove the heartiness of this salad, and the combo of the roasted beets with the orange is amazing! You could also swap the citrus for some summer stone fruit! YUM!
TUESDAY – Chicken Cutlet Zucchini Rollups // Boring chicken no more! With the overflow of zucchini and summer squash, this is the perfect way to spice up your chicken dishes! Obsessed with this one!!
WEDNESDAY – Sheet Pan Roasted Shrimp & Veggies // It’s hump day and we all need something easy! Grab a sheet pan and throw on your favorite veggies with some shrimp and pop it in the oven. Dinner is done!
THURSDAY – Vegetarian tacos // You won’t miss the meat in these vegetarian tacos! They’re packed with flavor and perfect for a quick and easy meal!
SWEET TREAT – Chocolate Brownie Chunk & Mint Chip Ice Cream // If you haven’t made this no-churn ice cream yet you MUST. All you need is two bowls and a freezer! This is basically two recipes in one. Take your pick, chocolate brownie or mint? They’re both insanely delicious!!
