Happy Saturday and welcome to Weekly Meal Plan #19! I’ve spent the past week on vacation with my family in Rehoboth Beach, DE. If you’ve been following along on Instagram you know that the trip has been nothing short of amazing. So incredibly relaxing, perfect weather, and way too late game nights. Having said that, this meal plan is coming to you a bit later than usual, sorry about that! But, better late than never, right? Tomorrow I attempt to go back to reality and meal planning is first on my list. I hope you find some inspiration for the week!
SUNDAY – Sweet Ginger Glazed Chicken & Peppers // I love this one pot dish when I feel the need to shake up my chicken recipes. Serve it with some herbed basmati rice and call it a day!
MONDAY – Heirloom Tomato Salad w/ Basil Vinaigrette & Homemade Croutons // Omg this salad is everything summer is and should be! While heirlooms are at their peak right now, this is truly a once a year salad that needs to make an appearance on your table! Serve it with some grilled salmon or chicken and your family will go nuts.
TUESDAY – Grilled Broccolini w/ Easy Baked Chicken // Yep, you get two recipes in one! I’ve been making this grilled broccolini all summer long and I never get sick of it. Pair it with my easy baked chicken and dinner is done. And healthy!
WEDNESDAY – Crispy Quinoa & Black Bean Burgers // OBSESSED with these burgers I just posted last week! So hearty and satisfying, without the meat. I don’t know about you, but I LOVE a good veggie burger and this one has my heart.
THURSDAY – Roasted Vegetable Orzo Salad // Hands down my go-to salad for summer. It’s the best dish to bring to a BBQ and to feed a crowd. It also makes great leftovers! Serve this alone or with some grilled chicken for summer perfection.
SWEET TREAT – Lemon Blueberry Olive Oil Cake // It’s been a while since I’ve made this cake and I don’t know why? It’s so light and perfect for the season. I love the combo of flavors and that coconut whipped cream is eeeeeeverything!
