Is summer winding down quicker than you thought, or is it just me? I can’t even believe my brain is starting to think about back-to-school, pumpkin muffins and the holidays! Whuuuuuuuuuut?! August is always that weird in between for me where I’m trying to soak up every last minute of summer, but also so insanely excited for fall to come, ya know?
Anyways, Weekly Meal Plan #20 is here and I kinda love it. Also, let me be clear about these meal plans. Really, they’re just supposed to be more of meal “inspiration” for you. If you feel like making each and every dish on the assigned day, great! Or, if you simply get one or two great ideas for the week, that’s awesome too! I’m simply here to inspire, not to tell you what to do. Ok, let’s get to it.
SUNDAY – Spicy Stuffed Peppers // A staple in my house! Easy, healthy and it makes a ton so leftovers are always a plus with this recipe.
MONDAY – Slow Cooker Sweet Potato Chicken Chili // If Starbucks can start having pumpkin drinks right now, then I can start posting chili. This is one of my absolute faves and I love slow cooker meals in the summer when I don’t feel like turning on the oven.
TUESDAY – Grilled Artichoke & Mushroom Lemon Pasta // Hands down the most popular and best pasta recipe on my website.
WEDNESDAY – Easy Fish Tacos // Obsessed with fish tacos these days! You gotta try these.
THURSDAY – Quick & Easy One Pot Mexican Quinoa // My sister-in-law makes this recipe every single week. And you should too. One pot, flavorful and satisfying!
SWEET TREAT – Gluten Free Peanut Butter Chocolate Chip Cookies // I recently had these cookies again while on vacation last week. They’re AMAZING and a must if you’re a peanut butter lover.
