    These easy to make Slow Cooker Recipes will hit the spot as the weather starts to cool down. Every one of these is a true set-and-forget slow cooker wonder that make delicious meals a snap.

    Is there any appliance more trusty than a slow cooker?! It’s the busy family’s BFF and the easiest way to have a home-cooked meal on a busy day. I love that slow cooker dinners allow me to take advantage of an afternoon burst of energy to get food going, and then when 5:00 rolls around and I’m dragging…dinner is ready. Love that for me! These 8 Fall Slow Cooker Recipes are favorites I’ve made over and over again. My whole family loves them, they’re super simple to assemble, and most importantly they taste incredible. Enjoy!

    Slow Cooker Turkey Meatballs

    Turkey Meatballs are like the Swiss Army knife of your recipe box. They can be an appetizer, a side, a main dish, whatever you need. And they’re delicious every time! Serve them with rice, pasta, on toothpicks, in a sandwich, however you like! Then watch everyone at the table go into a happy food coma.

    Slow Cooker Mashed Potatoes

    This is one of my favorite ways to free up stovetop space on a busy cooking day! These Slow Cooker Mashed Potatoes are creamy, dreamy, and perfectly seasoned. As a huge bonus, when they’re done cooking, the slow cooker keeps them warm until you’re ready to serve. That’s what I’m talking about!

    Everyone loves a pan of perfect nachos. This is my go-to dish for game days, and the slow cooker makes it easy as can be to make seconds and thirds. Plus, the leftovers are delicious over rice or in salads, so make a double batch!

    Slow Cooker Salsa Verde Chicken

    I feel like this is classic slow cooker fare: chicken, salsa, a couple simple seasonings, and 4-6 hours to the most perfectly tender, juicy chicken you’ve ever had. It makes your whole house smell incredible, and I love it on tacos, bowls, or over Easy Instant Pot Coconut Rice.

    I love to make mini meatballs with this recipe. They’re just so cute, and it makes the bold barbecue flavor even more delightful! To make things a little more interesting, this recipe has a secret ingredient that you’ll just have to trust me on.

    This is everyone’s favorite brisket recipe! Making it in the slow cooker takes SO MUCH stress out of dinnertime. I make this brisket every single year for the holidays, and recently, I’ve had to start making TWO because it’s so beloved!

    If any dish was made to be eaten in the fall, it’s this Slow Cooker Sweet Potato & Chicken Chili. It’s got the color, the flavor, and of course that comfort food factor that we all crave as the seasons shift.

    Everyday Slow Cooker Pot Roast

    This is the pot roast that feels special enough for a holiday, but it’s easy enough for a weeknight! I love pot roast fresh out of the slow cooker served over mashed potatoes, but I also love having leftovers in the refrigerator for sandwiches! It’s a truly delicious win-win.

    Fall Slow Cooker Recipes: Everyday Pot Roast

    Description

    This is a classic, nostalgic, perfectly tender everyday slow cooker pot roast! It feels special enough for Sunday dinner but it’s so easy you can make it on a weeknight. Find more slow cooker recipes above!


    Ingredients

    Scale

    Serves 4-6

    • 1 (3.5 – 4 pound) chuck roast
    • 3 teaspoons salt
    • 1 teaspoon pepper
    • 2 teaspoons garlic powder
    • 2 teaspoons dried oregano
    • 4–5 medium Yukon gold potatoes, quartered
    • 4 large carrots, peeled and cut into 1 inch pieces 
    • 2 cups low sodium beef broth
    • 1 cup marinara sauce
    • ⅓ cup coconut aminos (or soy sauce)
    • 2 tablespoons worcestershire sauce 
    • 1 tablespoon tomato paste
    • 1 tablespoon arrowroot powder (or cornstarch)
    • 3 tablespoons cold water 

    Instructions

    1. Pat dry the chuck roast with paper towels. In a small bowl mix together the salt, pepper, garlic powder and oregano. Rub spice mixture all over the roast and place back in the fridge if not using right away (you can do this overnight if you have the time). 
    2. When ready to cook, add the spice rubbed roast into the slow cooker. Place the cut potatoes and carrots all around the roast. 
    3. In a large bowl whisk together the beef broth, marinara sauce, coconut aminos, worcestershire sauce and tomato paste. Pour mixture over the roast and veggies. 
    4. Cover and cook on high for 4-5 hours or low for 7-8 hours. 
    5. Once meat is cooked and falls apart easily, remove from slow cooker and set on a cutting board to rest. 
    6. Whisk together the arrowroot powder and water in a small bowl to create a slurry. Pour the slurry into the liquid in the slow cooker and stir. The liquid will begin to thicken after 2-3 minutes. Shred the meat and serve with potatoes, carrots and sauce.
