Cooking with spices can be overwhelming and intimidating. I get it. You walk down the spice isle and see rows and rows full of various spices. Everything from allspice to saffron to turmeric. Many of which you may have never heard of, and/or have no idea how to use them in your cooking.
Well I’m here to tell you that you’re not alone! While cooking with spices can certainly be a wonderful thing, if you’re cooking with good ingredients, the spices you need are minimal. Aside from salt and pepper, which I use in almost everything, my top two most used spices are…
1. Onion powder
2. Garlic powder
Think about it. How many dishes do you know that begin with a base of onion and garlic? I know a lot. Onion and garlic are used all the time to create flavor, so why not enhance that flavor with a little onion powder and garlic powder?!
I use these two ALL THE TIME, in conjunction with salt and pepper of course. I use it on chicken, fish, meat, veggies, sauces, really the possibilities are endless. Now if you pay attention to my recipes, you’ll see how often these guys pop up. Also, I’m not a big spicy food lover, but if I want to add just a little bit of heat I often resort to good old red pepper flakes. I like the kind of heat it brings to dishes, and a little goes a long way.
