SUNDAY – Loaded Spinach Quinoa Casserole // This is one of those dishes that I always forget about, then when I make it I always say to myself, “why don’t I make this more often?” It’s such a great staple, it makes a ton and I love it for leftover lunch the next day.
MONDAY – Instant Pot Lemon Chicken Soup // My new favorite light and healthy fall soup. Pure chicken soup for the soul right here.
TUESDAY – Roasted Broccoli Quinoa Salad // I absolutely love this simple, hearty salad. It’s great as a side dish, or perfect for a quick lunch!
WEDNESDAY – Butternut Squash Soup // I made this soup last week on my Instagram Live and it was a huge hit. It’s creamy and delicious without the cream! It’s a must for this season.
THURSDAY – Whole Wheat Tomato Pesto Pizza Rolls // Sometimes we need a little comfort food and these pizza rolls are it! I love this twist on the classic pizza for something a little more special and fun.
SWEET TREAT – Pumpkin Cake w/ Vanilla Cinnamon Glaze // This is the best pumpkin cake in the world. Perfectly moist and bursting with fall flavors! Hello, October!
