Welcome to another round of Weekly Inspiration! Headlining this week of dishes: Crispy Smashed Potatoes, one of my personal favorites. It’s the only potato dish that even comes CLOSE to French fries. You boil, you smash, you roast, and you ENJOY! The blend of seasonings on these is also perfection. You could seriously eat these Crispy Smashed Potatoes for breakfast, lunch, or dinner. I know I do!
Next in the Weekly Inspiration? Slow Cooker Salsa Verde Chicken. This dish is so versatile and it’s a great one to make at the beginning of the week to have on hand as a delicious protein. You can put it in tacos, salads, quesadillas, soups, or eat it as a main dish! Endless possibilities here, my friends.
Coconut Rice is a regular around here. It’s as easy as piling ingredients into the Instant Pot and hitting a couple buttons. I’ve also included stove top directions in case you don’t have an Instant Pot! Make a batch of Salsa Verde Chicken, a double batch of Coconut Rice in the Instant Pot and you are SET. Eat all week!
