Welcome to another Weekly Inspiration! This week’s recipes just scream OCTOBER to me. They make me want to wander the Halloween section at Target, pull out my comfiest sweaters, and cook something delicious using seasonal fall produce. Every single one of these recipes has a special place in this season for me, and I get so excited when it’s time to make them!
Almond Crusted Whole Roasted Cauliflower is this kind of unicorn dish that LOOKS as good as it TASTES. The natural texture of the cauliflower really shines and impresses a crowd, and the taste is just as impressive! It’s one of my favorite things to have on the table.
If you want something classic and delicious simmering in your slow cooker or Instant Pot, you’ve gotta try my Coconut Lime White Chicken Chili. It’s in this Weekly Inspiration because it’s so perfect for fall!
And to add some pasta into your week, I’ve got a Butternut Squash Skillet Pasta. It’s cheesy, it’s got seasonal vegetables, and it’s a one-pot wonder. Yes!
