First up for our Weekly Inspiration are Pumpkin Chocolate Swirl Muffins. They sound fancier and harder to make than they are. Isn’t that the best kind of dessert?! Pumpkin and chocolate combined are just a MUST HAVE in October, so I knew these had to be top of the list and just in time for Halloween!
Having a big, warm pot of chili simmering on the stove during the fall months? Total nostalgia. My 30-Minute Turkey Quinoa Chili is next up in this Weekly Inspiration. It’s the perfect recipe for Halloween night when people are coming and going from your house! You want those bellies warm and full with something nutritious before the sugar overload. It also only takes 30 minutes to make! Huge bonus.
My final pick for this Weekly Inspiration is Moroccan Baked Fish with Chickpeas, which is a recent favorite. It’s got great depth of flavor, and served on a bed of my Instant Pot Coconut Rice, it’s total comfort food! You seriously cannot go wrong adding this into your weeknight rotation.
