If I had to use one word to describe these recipes it would be COMFORTING. I always want you to feel comforted and nourished when you make a recipe from my site! These three Weekly Inspiration recipes fit the bill exactly and I’m so excited to share them with you right now.
One-Pot Mexican Quinoa is a really delicious way to mix up your weeknight dinner routine. I love that you can 100% make it your way. Add chicken, add veggies, top it with shredded cheese…whatever sounds good! The leftovers are excellent for lunchtime, too.
Artichoke & Goat Cheese Breakfast Bake. Don’t those words just spark joy? They do in me! I love having a breakfast option in my Weekly Inspiration and this one can be made ahead. That makes it perfect for when you have guests in the house! It’s also a great weekend breakfast. A winner every time!
Finally, Vegetarian Pumpkin Chili. Thanksgiving is over but I am NOT done with pumpkin! It’s in the Weekly Inspiration to get you through the craziness of December with a delicious chili on hand for all those cold days. It’s hearty and filling, and just like the Mexican Quinoa, really excellent leftovers!
