Some of my absolute favorites for this Weekly Inspiration: Oven Baked Potato Latkes, Broccoli Breakfast Bake, and Mom’s Best Banana Bread!
The holidays are in full swing! I catered this Weekly Inspiration to those of you who are busy, celebrating, gifting, partying…all the holiday things!
First up is a Hanukkah classic: Oven Baked Potato Latkes! I bake these in the oven instead of frying them. They’re perfectly crispy on the outside with a soft center and your house doesn’t smell like oil for the next week. That’s a huge Hanukkah win! No matter what you celebrate, these are the most delicious side dish. Salty, crispy, flavorful potatoes?! They HAD to be first on this week’s Weekly Inspiration! I hope you’ll give them a try, especially if you’ve never had latkes before.
Next up is a newer recipe on Life is But a Dish. It’s my Broccoli Breakfast Bake, and it’s my favorite way to add veggies into the first meal of the day. If you’re entertaining right now, this is a GREAT breakfast option for feeding a house full of guests! It felt like just the right fit for a December Weekly Inspiration.
I included this last Weekly Inspiration recipe because it’s so good for SO MANY different purposes. It’s my Mom’s Best Banana Bread, and I am not kidding when I say I hear almost DAILY how much you guys love this recipe. You could make this to gift to neighbors, teachers, and friends. You could make it to have a delicious snack on hand for your busy self. And of course, make it to use those brown bananas on the counter!
