It’s Weekly Inspiration time! Let’s make Spinach Breakfast Muffins, Chicken & Black Bean Enchilada Casserole, and Roasted Broccoli Quinoa Salad
Let’s get to it! We’re getting this Weekly Inspiration rolling with the most important meal of the day: breakfast! I love these Spinach Breakfast Muffins because you can make a batch and enjoy them all week long. This is a great way to get a healthy serving of veggies in the mix, too! They’re free of refined sugar but taste like a totally decadent bakery muffin.
One of my family’s all-time favorites is Chicken & Black Bean Enchilada Casserole. It’s a huge pan of delicious flavors all here to party: chicken, black beans, and so much cheese. The best part of this Weekly Inspiration dish is that you get all the flavor of a pan of enchiladas and none of the rolling. Mix, bake, EAT.
Roasted Broccoli Quinoa Salad is probably one of the tastiest meals you can make for yourself. It’s so good as a side, as a main dish, as a lunch…you cannot go wrong. The crispy edges of the roasted broccoli add a texture that’s just perfect. It’s finished with a little Parmesan and a fresh squeeze of lemon. This is a simple, fresh salad with quality ingredients. Totally my jam.
