Hello, Weekly Inspiration! Let’s make Irish Soda Bread, Oven Roasted Green Beans, and Massaged Kale Salad!
Another Weekly Inspiration is upon us! Tuesday is St. Patrick’s Day, and while this isn’t a holiday I usually get super into, I do love me some Irish Soda Bread. This recipe is really fluffy and soft on the inside but has a perfect crust. YUM. A lot of people are super intimidated by baking their own bread (I get it!), but this recipe is so, so easy. No kneading. No rising. Just mix, shape, bake. See? I told you you can do it! I make mine with a citrus butter that’s out-of-this-world good. You won’t be able to keep your hands off of it!
I love including a side dish in my Weekly Inspiration roundups, and this week it’s my crowd favorite Oven Roasted Green Beans. This is a dish with just four ingredients and it goes with chicken, fish, steak, whatever. Literally anything you’re making for dinner this week will be improved with these green beans as a side!
Let’s round it out with a little massage! I’m talking about my Massaged Kale Salad. This is an A+ lunch that even kale haters don’t mind! Kale is such a great way to add SO MUCH nutrition into your day, too. I had to include it in this Weekly Inspiration! Giving the kale a deep tissue massage breaks it down into a soft, easy-to-eat dish rather than the bitter crunch that a lot of people associate with kale. Massaging also helps the olive oil, lemon, and salt reallllly get worked in! Seriously, the best flavors.
