How can a week somehow fly by while each day felt like it was moving at a snail’s pace?! It’s been a strange time, friends. Either way, it’s time for another Weekly Inspiration! Whether you have fresh or frozen ingredients on hand, I hope you leave here feeling a little more inspired in the kitchen.
The first of the Weekly Inspiration is…drumroll, if you will…my Spice Roasted Halibut with Avocado Salsa! Okay, so the halibut is really, really good by itself. Serve it over some Coconut Rice and I think you’ll be very happy with your meal. But you add that avocado salsa and BOOM! Mind blown! So good.
To keep the tasty seafood going, I’ve included one of my classics, an all-time Disher favorite, in this Weekly Inspiration: Honey Glazed Salmon! The secret really is the sauce on this one. It is so, so YUM. This is a go-to dish when we have a date night in, which makes it perfect for right now. Make your weekend feel a little fancier! Make this dish!
Finally, a Weekly Inspiration DESSERT that also happens to be perfect for Passover coming up! Coconut Macaroons with a little drizzle of chocolate are so good. They’re easy to make, but they feel fancy, and that toasted coconut flavor is just too good to be true. Using a bunch of pantry staples, this recipe is easy peasy and deeeeeelish.
