I cannot tell you how excited I am to be doing a Weekly Inspiration filled with springtime favorites. With everyone quarantined and feeling a little isolated, I think we all need the brightness this season is offering. All of my recipes this week feature in-season produce (but don’t worry, I’ve still got dessert!) and so much good flavor. I hope these dishes are mood-brighteners in your house!
My Almond Crusted Whole Roasted Cauliflower is usually a go-to when I’m entertaining. It looks really beautiful on a set table and it’s always a crowd pleaser. Of course, we aren’t entertaining at all right now, but I think it’s the perfect way to make a night at home feel a little special. Break out the fancy china! Pick some backyard flowers and put a bouquet on the table! Tell Alexa to play some soft music! You won’t regret it.
When there’s a Weekly Inspiration with crowd-pleasing veggies, I have to include this Spring Pasta Salad with Asparagus, Peas, & Greens. So many good veggies in there! With a little pasta mixed in, this is a one-dish wonder. Make it for dinner, then enjoy the leftovers for lunch.
Okay, I promised something sweet in this Weekly Inspiration, and it’s not gonna disappoint. Carrot Cake is universally beloved, isn’t it? Don’t tell me if it’s not. I can’t stand the thought of a Carrot Cake hater, especially when I have a recipe this good in my possession. This is an absolutely irresistible dessert, and I love making and serving it!
