Let’s hop into another Weekly Inspiration! I’ve got a little main dish action, a side salad to love, and a sweet dessert to finish it off. First things first: Easy Picadillo for a weeknight dinner. I’m not usually an olive person, but I found these green olives at Trader Joe’s that have become my one exception. They’re really good, and this Picadillo makes them EVEN BETTER.
Slam dunk side or nutritious and tasty lunch? My Sauteed Zucchini, Corn, & Mint Salad with Lemon and Parmesan is a restaurant-quality salad (assuming the restaurant has really, really good salads, of course). I just keep coming back to it! It’s in this Weekly Inspiration because it uses warm weather veggies to make an in-season salad full of delicious goodness.
Let’s do a little something sweet to finish off this Weekly Inspiration! Oatmeal Cake is a favorite around here for dessert AND for breakfast (it’s oatmeal!). You can even make it with pantry staples, so it’s perfect for this quarantine time. I feel like everyone is reaching into the backs of their pantries and scratching their heads…or is that just me? Either way, bake an Oatmeal Cake ASAP and cheer the whole house up!
