This Weekly Inspiration has Oven Roasted Tomatoes and Burrata, Grilled Fish Packets, and Easy Fresh Carrot Soup. Classics!
I am starting off STRONG with this one guys. As soon as I thought Weekly Inspiration for this week, I knew it would be Oven Roasted Tomatoes and Burrata. I HAD to! It’s a so-good-you’ll-cry kind of appetizer, side, or snack. If you can use fresh tomatoes from your garden or the farmer’s market, even better!
Grilled Fish Packets might not SOUND super exciting, but they’re actually one of our family’s favorite meals. They’re awesome to make ahead of time and they’re full of flavor. Weekly Inspiration win! I love them for the summertime especially! Use your favorite kind of fish and I promise you’ll be happy.
My Easy Fresh Carrot Soup is a recent addition to the blog. Serve it hot or cold (yes, cold!) and enjoy the simplest ingredient list. It is so fresh, flavorful, and delicious that Zach and I immediately agreed it could be served at a restaurant. Serious! It’s the third Weekly Inspiration dish, but it’s one of my favorites.
