What a week it’s been over here! Work life aside for a minute, big things are happening in the Schwartz household! We’ve got husbands graduating from business school, and 5 year olds graduating from preschool ? Zoe is going to Kindergarten in the fall, and I couldn’t have imagined how emotional this would be for me. Needless to say, she’s more than ready and I couldn’t be more proud of the little girl she’s become.

SUNDAY – Turkey Meatloaf // Not just any turkey meatloaf. This is hands down the best turkey meatloaf you’ll ever have. Be creative, and add whatever you like! Sunday night dinner just got awesome.
MONDAY – Crispy Baked Buttermilk Chicken // Crisp and lemony on the outside, and tender juicy on the inside. The whole family will love this chicken recipe.
TUESDAY – Easy Broiled Salmon Bowls w/ Asparagus & Rainbow Chard // Switching it up with these easy bowls! Serve over brown rice or quinoa for a slightly heartier meal.
WEDNESDAY – Spring Pea Salad w/ Grilled Apricots & Feta // This salad is loaded with goodness, and goes great with some grilled chicken or fish!
THURSDAY – Loaded Spinach Quinoa Casserole // One of the oldest recipes on my blog, and one of the most popular! This dish is packed with ground turkey, spinach and quinoa for a super filling and flavorful meal. Also makes great leftovers!
SWEET TREAT – Banana Peanut Butter Ice Cream // No ice cream machine? No problem! This ice cream is dairy free, refined sugar free, and the perfect summer treat! Just frozen bananas and a scoop of nut butter if you please!
