4 Ingredient Pancakes
4 simple ingredients to create a healthier pancake option. They freeze well and great for on the go!
- 2 ripe bananas
- 4 eggs
- 3/4 cup almond flour
- 1 teaspoon baking powder
Mash the bananas in a large bowl. Add the eggs and whisk together. Stir in the almond flour and baking powder until well combined.
Heat a nonstick pan over medium/high heat. Spray with a little nonstick cooking spray and spoon about 1/4 cup scoops of batter into the heated pan. Cook for about 2 minutes per side, or until golden brown.
Serve alone or with maple syrup! You can keep these in the fridge or freezer and simply reheat in the microwave for about 30 seconds.
