4 Ingredient Pancakes

4 simple ingredients to create a healthier pancake option. They freeze well and great for on the go!

  • 2 ripe bananas
  • 4 eggs
  • 3/4 cup almond flour
  • 1 teaspoon baking powder


  • Mash the bananas in a large bowl. Add the eggs and whisk together. Stir in the almond flour and baking powder until well combined.
  • Heat a nonstick pan over medium/high heat. Spray with a little nonstick cooking spray and spoon about 1/4 cup scoops of batter into the heated pan. Cook for about 2 minutes per side, or until golden brown. 
  • Serve alone or with maple syrup! You can keep these in the fridge or freezer and simply reheat in the microwave for about 30 seconds.
