Oven Roasted Tomatoes & Burrata

These dreamy roasted tomatoes served over a bed of soft burrata cheese is an amazing appetizer with crackers or a simple side dish for spring and summer!
Servings 4


  • 2 pints cherry tomatoes (about 20 ounces total)
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • pinch of pepper
  • torn fresh basil
  • 8 ounces burrata cheese (at room temperature)


  • Preheat the oven to 425 degrees. Toss the tomatoes on a sheet pan with olive oil, salt and pepper and roast for 30-35 minutes. 
  • Toss with some fresh torn basil and serve over burrata cheese with crackers as a dip or as a side dish with a meal.
