Pull that bag of frozen peas out of your freezer and give them a chance to shine! My 10-Minute Pea Pesto uses fresh mint and lemon to create a super quick topping for your favorite dishes.


  • 2 cups frozen peas, thawed
  • 1 small garlic clove
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon salt
  • Pinch of pepper
  • 10 mint leaves
  • ½ cup olive oil
  • Juice of 1 lemon


  1. In the bowl of a food processor or blender add the peas, garlic, mint, cheese, salt and pepper and pulse until well combined, but not totally smooth. Slowly drizzle in the olive oil while pulsing. Add lemon juice and salt and pepper to taste.
