Cauliflower Mashed Potatoes

Description

A healthy substitute for regular mashed potatoes using fresh cauliflower and potatoes. Makes a great side dish for the holidays or any day!


Ingredients

  • 3 pounds yukon gold potatoes, peeled and quartered
  • 1 head cauliflower, (roughly chopped)
  • 4 tablespoons butter (melted)
  • 1 cup half and half
  • 3 tablespoons olive oil
  • 2 teaspoons salt (more to taste)
  • 1/4 teaspoon pepper


Instructions

  1. In a large pot, boil the potatoes and cauliflower until fork tender (about 15 minutes).
  2. Drain potatoes and cauliflower and using a potato masher, food mill, or ricer, mash them in a large pot.
  3. Add the melted butter, half and half, olive oil, salt, and pepper to the potato mixture. Add more salt to taste as needed.
