Description
A healthy substitute for regular mashed potatoes using fresh cauliflower and potatoes. Makes a great side dish for the holidays or any day!
Ingredients

- 3 pounds yukon gold potatoes, peeled and quartered
- 1 head cauliflower, (roughly chopped)
- 4 tablespoons butter (melted)
- 1 cup half and half
- 3 tablespoons olive oil
- 2 teaspoons salt (more to taste)
- 1/4 teaspoon pepper
Instructions
- In a large pot, boil the potatoes and cauliflower until fork tender (about 15 minutes).
- Drain potatoes and cauliflower and using a potato masher, food mill, or ricer, mash them in a large pot.
- Add the melted butter, half and half, olive oil, salt, and pepper to the potato mixture. Add more salt to taste as needed.
