This Spinach & White Bean Soup is the perfect combination of comfort and convenience. It comes together in just 30 minutes, so you can whip it up even on your busiest weeknights. Packed with colorful veggies, canned tomatoes and hearty beans, this soup will keep you cozy even on the coldest nights.

- ¼ cup olive oil
- 1 yellow onion, small dice
- 4 garlic cloves, minced
- 3 stalks celery, thinly sliced
- 1 (28 oz) can whole tomatoes, roughly chopped
- 1 tablespoon tomato paste
- Handful chopped parsley
- 1 can white beans, rinsed and drained
- 5 cups low sodium chicken stock
- 5–6 handfuls fresh spinach
- 1 teaspoon salt
- ¼ teaspoon pepper
- Parmesan cheese for serving
Instructions
- Heat a large pot over medium heat. Add the olive oil, onion and a pinch of salt. Cook for 3-5 minutes until the onion begins to soften. Add the garlic and celery and cook for another 1-2 minutes.
- Add the tomatoes, tomato paste and parsley and cook on medium/high heat for about 10-15 minutes until tomatoes break down and become saucy.
- Add the beans and chicken stock and bring to a boil. Once boiling, turn down to a simmer and add the spinach, 1 teaspoon salt and ¼ teaspoon pepper. Simmer for about 5 minutes then serve immediately with fresh parmesan cheese and a crusty loaf of bread for dipping if you want!
