Description
These Oatmeal Chocolate Chunk Cookies are slightly crisp on the outside, soft on the inside, not too thick, and not too thin. Perfection!

- 1/2 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 1/2 teaspoon vanilla extract
- 1/2 teaspoon maple syrup
- 1/4 teaspoon cinnamon
- 1 cup all purpose flour
- 3 cups old fashioned oats
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup semi sweet chocolate chunks
Instructions
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside. Cream together the oil, sugar, and eggs. Add vanilla, syrup, and cinnamon and blend until well combined.
- Slowly add the flour, oats, baking powder, baking soda, and stir until just combined. Stir in the chocolate chunks.
- Scoop 1 tablespoon scoop of batter onto lined baking sheet and bake for 12-13 minutes, or until cookies just begin to turn a light golden color. UNDER BAKE THESE COOKIES!
