Oven roasted tomatoes make for the perfect side dish or addition to some of your favorite dishes. Serve them alone or on top of chicken, fish, pasta, salads…the possibilities are endless!
- 2 pints cherry tomatoes ((about 20 oz))
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1 pinch pepper
- torn fresh basil
- Preheat the oven to 425 degrees.
- Toss the tomatoes on a sheet pan with olive oil, salt and pepper.
- Roast for 30-35 minutes.
