Description

These slow cooker shredded chicken tacos are tender, juicy and so easy to prepare! Made with chicken breasts seasoned with salsa, the chicken cooks low and slow for the perfect Mexican-inspired dinner.


Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 1 tablespoon taco seasoning
  • 1 (12oz) jar your favorite salsa
  • 1 cup frozen corn
  • 1 can black beans, rinsed and drained
  • Corn or flour tortillas

Garnish options:

  • Shredded lettuce
  • Shredded cheese
  • Fresh cilantro
  • Diced avocado
  • Sour cream


Instructions

  1. Add the chicken breasts to the bottom of the slow cooker. Sprinkle with the taco seasoning. Add the salsa, corn and beans. 
  2. Cook on low for 6-8 hours or on high for 3-4 hours. 
  3. Remove the chicken to shred with two forks and return to the crockpot. Serve immediately in warmed tortillas with your desired toppings.
