Enjoy the taste of Slow Cooker Shredded Chicken Tacos, where tender, high-protein chicken gets a flavor boost from homemade taco seasoning! This easy recipe makes perfectly slow-cooked chicken ready to tuck into tortillas and customize with your favorite toppings!


Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tablespoon taco seasoning
  • 1 (12oz) jar your favorite salsa
  • 1 cup frozen corn
  • 1 can black beans, rinsed and drained
  • Corn or flour tortillas

Garnish options:

  • Shredded lettuce
  • Shredded cheese
  • Fresh cilantro
  • Diced avocado
  • Sour cream

Instructions

  1. Add the chicken breasts to the bottom of the slow cooker. Sprinkle with the taco seasoning. Add the salsa, corn and beans. 
  2. Cook on low for 6-8 hours or on high for 3-4 hours. 
  3. Remove the chicken to shred with two forks and return to the crockpot. Serve immediately in warmed tortillas with your desired toppings.
