Description

  • 1 large yellow onion, finely chopped
  • 1 carrot, finely chopped
  • 4 cloves garlic, minced
  • 2 pounds ground beef
  • 3 teaspoons salt
  • ½ teaspoon pepper
  • 3 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • ½ teaspoon cinnamon
  • 1 cup low sodium beef broth
  • 2 (28 oz) cans crushed tomatoes
  • 2 teaspoons worcestershire sauce
  • ¼ cup tomato paste
  • ⅓ cup fresh chopped parsley
  • Parmesan cheese for serving

Instructions

  1. Add the onion, carrot and garlic to a food processor and pulse until finely chopped. If you don’t have a food processor you can chop by hand. Set aside.
  2. In the bottom of the slow cooker add the ground beef, salt, pepper, oregano thyme, cinnamon, beef broth, crushed tomatoes, Worcestershire sauce, tomato paste and chopped veggies.
  3. Give a stir, then cook on low for 4-6 hours or on high for 2-4 hours. Break up the meat before serving, stir in fresh, chopped parsley and serve over pasta with parmesan cheese.
