Description

This Skillet Ground Turkey and Veggies is done in just 20 minutes start to finish. It’s light yet satisfying, packed with veggies, and comes together in one pan. It’s a fuss-free, flavor-packed meal you’ll turn to again and again.


Ingredients

  • ¼ cup olive oil, divided
  • 1 pound ground turkey
  • 1 ½ teaspoons salt
  • ¼ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 cup finely chopped cabbage
  • 1 cup cauliflower rice (I use frozen)
  • ½ cup frozen peas
  • 1 cup arugula 
  • ¼ cup chopped cilantro (or parsley)
  • 23 tablespoons coconut aminos

Instructions

  1. Preheat a large skillet over medium/high heat. Add 2 tablespoons of olive oil, ground turkey, 1 teaspoon salt, pepper, garlic powder and oregano. Break up the turkey and cook for about 3-5 minutes until cooked through. 
  2. Remove the turkey from the pan, then in the same pan add 2 more tablespoons of oil, the cabbage, cauliflower rice and ½ teaspoon salt. Cook for 3-5 minutes until cabbage begins to soften. Add the peas and cook for another few minutes. Add the turkey back in and stir to combine. 
  3. Add the arugula, cilantro and coconut aminos and stir until arugula has wilted. Serve immediately, on its own or over rice.
