- 1 small yellow onion, sliced
- 1 red bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 small fennel bulb, sliced
- 2–3 tablespoons olive oil
- 1 teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 (12 oz) package Italian sausage (or chicken sausage)
- Fresh basil for garnish
- Hot dog buns (optional)
Instructions
- Preheat the oven to 425 degrees.
- Add the onion, bell peppers, and fennel to a sheet pan.
- Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and oregano.
- Toss until the veggies are well coated.
- Cut the sausages in half and add them to the sheet pan.
- Roast in the oven for 25-30 minutes until veggies are tender and cooked through.
- Serve alone or in a hot dog bun with your favorite condiments.
