Add a splash of color to your table with this 5-Minute Blender Beet Hummus! It’s absolutely delicious as a dip for fresh veggies or crackers.
For the Hummus:
- 1 can chickpeas (drained and rinsed)
- 1 (8 oz package of steamed beets)
- ½ cup tahini
- Juice of ½ a lemon
- 1 small garlic clove (or half a large clove)
- 1 ¼ teaspoons salt
- ½ cup ice water
- Olive oil
- Fresh parsley
- Add all the ingredients to a high powder blender and blend until very smooth (about 1 minute). Adjust salt or lemon to taste. If the hummus is too thick, you can thin it out with a little extra ice water. Garnish with a drizzle of olive oil and some fresh parsley if desired. Store in an airtight container in the fridge for up to 5 days.
