    5-Minute Blender Beet Hummus

    Add a splash of color to your table with this 5-Minute Blender Beet Hummus! It’s absolutely delicious as a dip for fresh veggies or crackers.

    If you’re uncertain about beets, this hummus is a great way to try them. It’s a 5-Minute Blender Beet Hummus that combines the earthiness of beets with hearty chickpeas, nutty tahini, and fresh lemon and garlic.

    This is a fun take on my Best 5-Minute Blender Hummus and I love using it as a plant-based protein for a vegetarian meal.

    Ingredients in 5-Minute Blender Beet Hummus

    Aside from the beets, these ingredients are all classic hummus components! I used prepackaged steamed beets to make this dish as simple as possible. It comes together quickly in the blender!

    • Chickpeas – Drain and rinse your chickpeas before using them in hummus.
    • Steamed beets – Keep it simple; use an 8-oz package of already cooked beets to make this Blender Beet Hummus in just a few minutes.
    • Tahini – Tahini is a Middle Eastern condiment made from sesame seeds. A new jar of runny tahini blends into hummus really well.
    • Lemon – I used just half of a fresh lemon juiced. A bit of acidity makes all of the other flavors in this Beet Hummus just a bit brighter!
    • Garlic – Like with the lemon, I used a small amount (just one small clove or half a big clove), which is a good start since you can add more later if you want a stronger garlic flavor.
    • Salt – Just a pinch!
    • Ice water – This might seem unexpected, but ice water makes for the smoothest homemade hummus.
    • Garnishes – A drizzle of olive oil or fresh parsley as a garnish makes the finished Blender Beet Hummus look festive and delicious.

    Ingredients

    For the Hummus:

    • 1 can chickpeas (drained and rinsed)
    • 1 (8 oz package of steamed beets)
    • ½ cup tahini
    • Juice of ½ a lemon
    • 1 small garlic clove (or half a large clove)
    • 1 ¼ teaspoons salt
    • ½ cup ice water

    Garnish (optional)

    • Olive oil 
    • Fresh parsley

    Instructions

    1. Add all the ingredients to a high powder blender and blend until very smooth (about 1 minute). Adjust salt or lemon to taste. If the hummus is too thick, you can thin it out with a little extra ice water. Garnish with a drizzle of olive oil and some fresh parsley if desired. Store in an airtight container in the fridge for up to 5 days.
