This Quick Tomato Garlic Confit takes the same things that I love about my Oven Roasted Tomatoes recipe (delicious, fresh tomatoes absolutely bursting with flavor and juice)…and then adds fresh garlic and herbs. Try it with my Weeknight Balsamic Grilled Chicken for a super doable meal that makes you weak in the knees with that first delicious bite. It makes busy home cooks like me feel fancy!

Quick Tomato Garlic Confit Ingredients

Bring on the flavor! I love that this is an easy and colorful addition to your meal that adds so much to every bite. Toss it in the oven, and then while it cooks, prep the rest of your meal. Simple as can be!

  • Cherry tomatoes– Using cherry tomatoes is the key to a confit that cooks quickly. Make sure they get coated evenly in the olive oil and flavorings.
  • Garlic – Use the whole head! I’m talking 10-12 cloves. Trust me here; the garlic isn’t overpowering, it just soaks into every bubbly bite of tomato and the pairing is a total dream come true.
  • Roasting essentials – Olive oil, salt and pepper are going to coat the tomatoes so they roast to a perfectly juicy bite.
  • Red wine vinegar – I use a little splash of red wine vinegar–maybe a tablespoon–and the tangy flavor it adds just might be the secret sauce for a perfect confit.
  • Red pepper flakes – This is optional for those of you who like a little heat! If you’re sensitive to spice you can skip this, but I think just a pinch elevates every other flavor.
  • Fresh herbs – Basil, oregano, thyme…any of your favorites! Use one or a combination of a few for a super fresh, flavorful confit.

What is a Confit?

A confit is anything cooked slowly in fat. This can be meat or, in this case, a garnish made from cooking veggies in seasoned oil until they’re tender and juicy. I love having a recipe like this because it has a simple ingredient list and it makes even a weeknight meal feel a bit more elevated.

What to Serve With Confit

I think any savory dish would be amazing with Quick Tomato Garlic Confit! You could add this as a topping on fish, chicken, salad, pasta, or simply served with some crusty bread. Can you imagine pairing this confit with a soft cheese and crackers?! That would honestly probably be my food soul mate.

This fresh and colorful Quick Tomato Garlic Confit elevates every other item on your plate! It’s a perfect addition to any dinner or appetizer.


Ingredients

Scale
  • 2 cups cherry tomatoes, halved
  • 1012 cloves of garlic, smashed and peeled (about 1 head)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 11 ½  cups olive oil (enough for the tomatoes to be covered at least half way)
  • Splash of red wine vinegar (about 1 tablespoon)
  • ¼ teaspoon red pepper flakes (optional if you want some heat)
  • 1 handful of fresh herbs (basil, oregano, thyme or dill) 
  • Crusty bread for serving (optional)

Instructions

  1. Preheat the oven to 425 degrees. Add the tomatoes, garlic cloves, salt, pepper, olive oil, vinegar and red pepper flakes (if using) to a baking dish. Give a quick stir until everything is evenly coated. Add the fresh herbs on top.
