Description

A simple arugula, apple, and avocado salad! A refreshing side dish to your meal. Dressed with a balsamic, mustard, and maple syrup vinaigrette!


Ingredients

Scale
  • 2 cups arugula
  • 1 cup chopped romaine
  • 1/2 cup diced cucumber
  • 1/4 cup corn
  • 1/2 apple, diced
  • 1 avocado, diced
  • 1/4 cup slivered almonds (or any nut you like)
  • 1/4 shredded parmesan cheese

Maple Balsamic Dressing

  • 1/4 cup balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup olive oil


Instructions

  1. Prepare the dressing: In a small bowl whisk together the balsamic vinegar, maple syrup, mustard, salt and pepper. While whisking, slowly add the olive oil until well combined. Set aside.
  2. In a large salad bowl add the arugula, romaine, cucumber, corn, apple, avocado and almonds. Toss with a little bit of dressing (you won’t need it all). Add more dressing as needed. Top with parmesan cheese and serve!
