Description

Indulge in a delightful breakfast treat with this Baked Banana Cinnamon Brioche French Toast. This easy-to-make breakfast uses cinnamon brioche bread to create a rich breakfast that’s perfect for special occasions or holiday mornings. It’s a sweet and satisfying way to start your day!


Ingredients

Banana Topping

  • 1 stick unsalted butter
  • 1/2 cup coconut sugar (or brown sugar)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 5 bananas, sliced

Custard

  • 8 eggs
  • 2 cups whole milk (or half and half)
  • 1/4 cup sugar
  • 1/4 cup coconut sugar (or brown sugar)
  • 2 teaspoons vanilla extract
  • ½ teaspoon kosher salt
  • 1 loaf cinnamon swirl brioche bread, diced into 1 inch cubes (I use St. Pierre. You can also use regular brioche bread)
  • Powdered sugar for serving

Instructions

  1. Preheat the oven to 350 degrees. Grease a 9×13 inch baking dish and set aside.
  2. In a large skillet over medium-high heat, melt the butter and stir in the coconut sugar, cinnamon, and vanilla. Bring to a simmer and add the sliced bananas.
  3. In a large bowl, whisk the eggs, milk, sugar, brown sugar, vanilla, and salt. Add the diced bread to the custard mixture and mix until bread is well coated.
  4. Pour the bread mixture into the prepared baking dish and top with the banana topping.
  5. Bake for 55-60 minutes, until the custard is set and slightly crispy around the edges. Cool for 10 minutes, sprinkle with powdered sugar and enjoy.
