These quick and easy garlic roasted potatoes are packed with flavor and make a great simple side dish.


  • 1 pound small potatoes (halved or quartered)
  • 4 garlic cloves (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano


  1. Preheat the oven to 425 degrees. In a small bowl whisk together the garlic, olive oil, salt, garlic powder, and oregano.
  2. Spread the potatoes on a sheet pan and toss evenly with the spice mixture. Roast for 15-20 minutes until crispy on the outside, and soft in the middle.
