Baby Yukon gold potatoes are the star of these Lemon Mustard Roasted Potatoes and get tossed in a simple six-ingredient seasoning that features the tang of dijon mustard and the refreshing taste of lemon. Baked to perfection, these crispy potatoes are the ultimate side dish for any main course! 


  • 2 pounds baby yukon gold potatoes, halved or quartered if large
  • 2 tablespoons olive oil
  • Zest and juice of 1 lemon
  • 1 tablespoon dijon mustard
  • ½ teaspoon salt 
  • ¼ teaspoon garlic powder


  1. Preheat the oven to 450 degrees. Place potatoes on a parchment lined baking sheet.
  2. In a small bowl mix together the olive oil, lemon zest, lemon juice, mustard, salt and garlic powder. Pour over the potatoes and toss until evenly coated. 
  3. Place potatoes cut side down in one single layer and roast for 40-45 minutes until crispy and lightly browned.
