This easy side dish is made with just SIX simple ingredients, many of which you may already have on hand! A simple blend of olive oil, lemon zest and juice, Dijon mustard, salt, and garlic powder is all you need to bring these baby Yukon gold potatoes to life. You could use a homemade seasoning to amp up the flavor. The Dijon mustard adds a subtle tang, while the freshly grated lemon zest really brightens up the flavor for a potato that is crispy on the outside and tender on the inside.

Optimal Roasting Temperature

In order to get the best texture, you’ll need the right temperature in the oven. I’ve found that the optimal oven temperature for roasting potatoes is 450F. I know that seems high, but unlike roasting at 400 or 425, the higher temperature allows the potatoes to cook with more dry heat and much faster. Because of this, the potatoes don’t get a chance to release much steam, which keeps a nice crispy crust on the outside. Trust me, it’s worth it!

  • Olive Oil – Coats the entire surface area of the potatoes to make sure the seasonings stick. The oil also gets hot, which creates crispy skin. You can also use a different oil as long as it has a high smoke point such as avocado oil.

How To Make Lemon Dijon Roasted Potatoes

Prepare for baking: Preheat the oven to 450F. Line a baking sheet with parchment paper. 

Prepare the potatoes: Wash the potatoes thoroughly. You want them to be a uniform size, so cut each in half. If they are on the larger side, quarter them instead. Place them on the prepared baking sheet.

Season potatoes: In a bowl, mix together the olive oil, lemon zest, lemon juice, Dijon, salt, and garlic powder until evenly distributed. Pour over the sliced potatoes and toss until they are coated on all sides. Arrange each potato, so it is cut side down and in one single layer without overlapping.

Tips For Roasting Potatoes

  • Keep the potato pieces a uniform size. This with make sure that they cook evenly and are finished at the same time. 
  • Placing the potatoes cut side down allows contact with the very hot sheet pan. This is what creates that golden brown crust. 
  • Arrange the potatoes in a single layer without touching or overlapping. This prevents steaming, which could make the texture mushy or soggy. 
  • Baby potatoes are best for this recipe because they have a thin skin and a tender texture on the inside, which helps them roast quicker with a better texture. 

Customize The Flavor

  • Swap the Dijon mustard for whole grain mustard to add texture and a different tangy flavor.
  • Add dried herbs to the seasoning like basil, rosemary, thyme, or marjoram.
