We’ve all had chicken that tastes like nothing. Either it’s boring, or worse, rubbery. Nobody likes boring, rubbery chicken. The answer to tender, juicy and flavorful chicken is using a marinade.

Marinades not only help to add tons of flavor, but especially marinades that have an acid (in this case, lemon), it makes the chicken tender. It’s seems too easy, but really that’s all you need to do. My preferred method is to grill the chicken with this marinade.

How to Marinades Actually Work?

I almost always have a jar of this going in the fridge. And if you’re a busy home cook like me, I know you’re short on time. Don’t worry, it comes together in just a few minutes, and makes chicken tastes special.

A few Ingredient Notes

  • Fresh lemons – Use fresh. it’s best.
  • Dijon mustard – You can swap for whole grain/stone ground mustard, but not yellow.
  • Garlic powder – fresh garlic is also great.
  • Dried thyme – Can also use fresh thyme instead. Add a little more if using fresh.

Keeping it Fresh

Store the lemon chicken marinade on its own in an airtight jar in the fridge for up to 7 days, or freeze it for up to 3 months. Once raw chicken is in there, cook it within 2-3 hours or freeze the whole bag together and call it a head start. You can also double or tripe this recipe and call it meal prep!

  • 1 tablespoon Dijon mustard
