This soup reminds me SO much of one of my favorite soups on planet earth – The Tomato Rice Soup from Urth Cafe. I’m drooling just thinking about it, and I gotta say, I think I nailed it. While I have tons of soups that are super easy to make, this one has jumped to the top of my list.

We all have those nights when cooking feels like the last thing we want to do. But if you’re a busy home cook like me, feeding your family homemade delicious meals most of the time, is more important than throwing in the towel in exchange for fast food.

Ingredients

  • 2 tablespoons olive oil
  • 2 small onions, shredded
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 2 cups low sodium chicken broth
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon dried basil
  • ⅓ cup white rice, rinsed and drained

Instructions

  1. Preheat a soup pot over medium/high heat. Add the olive oil and onions, cook for 2-3 minutes. Add the garlic and cook for another minute. 
  2. Add the tomato paste, crushed tomatoes, chicken broth, salt, pepper, garlic powder and basil. Stir to combine. Stir in the rice and bring to a boil. Once boiling, turn heat down and simmer for 15 minutes on low heat. 
  3. After 15 minutes, cover and turn off the heat. Let it sit covered for another 15 minutes until the rice is cooked through. Check for seasoning, serve with crusty bread, grilled cheese or on its own.
