Grilled Teriyaki Salmon with Pineapple Salsa

This is such a fun summertime dish that I have been SO EXCITED to share with you! Teriyaki Salmon with Pineapple Salsa takes a bit of prep work, but I think you’ll find it well worth it when you take that first bite. The pineapple salsa is made with a little cucumber for crunch and cilantro for a bite, and when it’s added to the homemade teriyaki sauce? Out of this world!
How to Make Pineapple Salsa
Mmm, it’s just so bright and fresh and GOOD! It is summer in your mouth. This pineapple salsa pairs perfectly with salmon cooked on the grill. I think you’ll love it! Here’s what we’re putting in this salsa:
- Pineapple
- Red onion
- Cucumber
- Fresh cilantro
- Juiced limes
- Pinch of salt

Homemade Teriyaki Sauce
You can definitely buy a pre-made teriyaki sauce, but making one at home is as easy as whisking everything together in a saucepan! I make mine with pantry ingredients I usually already have at home:
- Water
- Brown sugar
- Soy sauce or coconut aminos
- Honey
- Garlic
- Ground ginger
- Arrowroot or cornstarch
- Salt
How to Grill Salmon
I am really into the flavor that the grill adds into the salmon. It’s the perfect light summertime dinner dish! Salmon is actually really easy to grill, which surprises a lot of people since it’s a tender and flaky fish. Let me show you how!
- Let the salmon sit in the teriyaki marinade for 30-40 minutes. This lets all that delicious flavor soak in and is super important for the best flavor before grilling!
- When you’re ready to cook, grease and preheat your grill to medium/high heat. This should be around 450 degrees.
- Place the salmon on the grill, close the lid, and leave it alone for 6-8 minutes. Boom! Perfectly grilled salmon!
- You’ll know it’s done when the salmon is firm to the touch and you can easily lift it from the grates without sticking.

Ingredients
- 4 (6-8 ounce) pieces wild caught salmon, about 1 inch thick
For the Teriyaki Sauce:
- 1 cup water plus ¼ cup
- 5 tablespoons brown sugar
- ¼ cup soy sauce or coconut aminos
- 1 tablespoon honey
- 1 clove garlic, minced
- ½ teaspoon ground ginger
- 2 tablespoons arrowroot or cornstarch
- ¼ teaspoon salt (as needed)
For the Pineapple Salsa:
- 2 cups finely diced pineapple
- ¼ cup finely diced red onion
- 1 small cucumber, small dice
- 2 tablespoons chopped fresh cilantro
- 2 limes, juiced
- Pinch of salt
Instructions
- Start by making the marinade. In a small saucepan add 1 cup water, brown sugar, soy sauce, honey, garlic and ground ginger. Heat over medium heat, whisking until sugar dissolves, about 2-3 minutes.
- Make the arrowroot (or cornstarch) slurry on the side. In a small bowl add ¼ cup water and 2 tablespoons of arrowroot and mix until combined. Pour mixture into the saucepan and whisk until your desired thickness is reached. This should take about 4-6 minutes. Turn off heat and set aside to cool.
- Once marinade has cooled, set aside about ½ cup to brush over salmon after it’s cooked. Place the salmon pieces in a small dish or bowl and cover with remaining marinade. Let sit for a minimum of 30 minutes and up to 3-4 hours.
- When ready to cook, grease and preheat your grill to medium/high heat, about 450 degrees. Place the marinated salmon on the grill, close the lid and cook for about 6-8 minutes until salmon becomes firm to the touch and you can easily lift the salmon from the grates without sticking.
- In the last 30 seconds of cooking, brush salmon with reserved teriyaki sauce then remove and plate. Top each piece of salmon with the pineapple salsa and enjoy!
For the Pineapple Salsa:
- Add the diced pineapple, red onion, cucumber, cilantro, lime juice and salt to a bowl and mix until combined. Serve on top of teriyaki salmon.
