As a busy home cook, people ask me all the time what I make for dinner when I don’t feel like cooking. This is one of my favorite questions and so extremely relatable because even though I love to cook, I certainly know what it feels like to not want to make yet another meal!

When time is limited, I look for three things when deciding what to make. Easy, delicious and minimal dishes. Cooking really is my happy place, but the fun is kinda taken out of it when there’s a pile of dishes to wash at the end. This is what I love about sheet pan dinners. Throw everything on one pan, pop it in the oven and you’re done.

I’ve found that this Lemony Sheet Pan Chicken Sausage with Veggies is a sheet pan dinner that checks all the boxes. The best part? There’s minimal, hands-on effort and it all comes together in about 45 minutes leaving time to deal with the laundry, homework questions, or dare I say – relax for a few?

What makes this sheet pan meal special?

Pretty much what makes all my meals special. I’ll give you one guess… Duh, it’s lemon! Oh, and the greens tossed in at the end. It’s a great touch and kinda my thing. Also, the beauty of this dish is how easily it can be customized based on what you have on hand. No stress, no fuss, just open your fridge and use what you got!

If your family isn’t into Brussels sprouts (though, I challenge you to try them here and report back), you can swap them for something else like zucchini, potatoes, or cauliflower.

The lemon juice at the end gives everything a nice little zing that makes the whole dish feel light and fresh. You know how a little zing is also my thing.

What you need

Here’s what you’ll need to make it happen: you might even have a lot of things already on hand!

  • Brussels sprouts: If they’re massive, cut them in half. They get so crispy and flavorful when roasted!
  • Carrots: They caramelize beautifully in the oven and add a nice pop of color.
  • Onion: Honestly, you can use whatever color you like.
  • Red bell pepper: Also, use whatever color you want!
  • Garlic: It calls for 4 cloves, but more is more when it comes to garlic.
  • Chicken sausage: Choose your favorite. I usually like a mild Italian Chicken Sausage.
  • Olive oil: You could also use Avocado Oil.
  • Seasoning: The usual suspects – salt, pepper, garlic powder, paprika and thyme.
  • Greens: A handful or two of whatever greens you’ve got on hand – spinach, arugula or kale.
  • Lemon juice: The not so secret ingredient.

How to Make It: Seriously, so easy

When it comes to cooking as a busy mom, the fewer steps, the better, right?

  1. Preheat the oven to 425°F: You want that high heat so everything gets crispy and caramelized. I find people often don’t have their ovens hot enough and things just steam!
  2. Prepare the veggies and sausage: Throw everything onto a sheet pan.
  3. Toss with olive oil and seasonings: Add your olive oil and all the spices (salt, pepper, garlic powder, paprika, thyme). Toss everything together until it’s all coated in the oil and seasonings.
  4. Roast for 40-45 minutes: Feel free to toss half way through, but it’s not necessary.
  5. Finish with greens and lemon: This is my favorite part. While everything is still hot, toss the greens and lemon to tie the dish together.

A few helpful tips:

  • Meal prep friendly: Make it easy on yourself and chop everything up ahead of time. When you’re ready to cook, dump it all out and roast!
  • Add a starch: Feel free to serve it over coconut rice, quinoa, or even mashed potatoes.
  • Make it spicy: Add some red pepper flakes for a little heat.

Ingredients

  • 2 cups brussels sprouts, (halved if large)
  • 4 large carrots, peeled and large dice
  • 1 onion, large dice
  • 1 red bell pepper, large dice
  • 4 garlic cloves, thinly sliced
  • 1 package Chicken Sausage, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • ½ teaspoon thyme
  • 23 handfuls greens (spinach, arugula, mixed greens)
  • Juice of half a lemon

Instructions

  1. Preheat the oven to 425 degrees. In a large bowl add all of the ingredients except for the greens and lemon juice. Toss until the sausage and veggies are well coated.
  2. Spread evenly onto a sheet pan and roast for 40-45 minutes. Remove from the oven and carefully toss in the greens with the lemon juice. Let the heat from the veggies wilt the greens. Serve immediately!
