What’s the difference between Green Beans and Haricots Verts?
The short answer is not much. Technically Haricots Verts are a french version of a green bean, and typically skinnier and slightly more tender. You can use either in this recipe however, the cooking time will vary slightly given that the Haricots Verts are more delicate. While I love them both, I like using traditional green beans in this recipe because they can handle the roasting a little better.

The other end is totally fine to leave as is. Green beans are super versatile and can be cooked many different ways. The method I will show you today is my family’s favorite way to enjoy this spring vegetable. Ava says, “these are the best green beans I’ve ever had!”
Once they’re trimmed and prepped, toss the beans with a little oil and your favorite spices and it’s as simple as that!

Ingredients
- 1 pound green beans, trimmed
- 1 tablespoon olive oil (or avocado oil)
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
Instructions
- Preheat oven to 425 degrees. Line a baking sheet with parchment paper and add the prepared green beans. Drizzle oil on top and sprinkle evenly the salt and garlic powder.
- Roast for 15-20 minutes or until desired doneness.
Notes
Feel free to add pepper or red pepper flakes for some extra spice, or get creative with the seasonings. This is just a base recipe to get you going, but we love them this way!
This recipe is so simple but delicious. I didn’t know I could roast green beans till I looked this up. When I’m already roasting something else, this is just adding a tray to the oven. So simple. So glad you posted this especially with the picture.
