Hello cozy soup. I gotta tell you, I’m the kind of person who can eat soup all year long. I don’t care what the weather is, soup is comfort and I love a good, classic comfort food. This easy and deliciously satisfying Instant Pot Tortellini Soup is one my favorites because you get all the goods in one place. Cheesy, creamy, hearty, filling and packed with veggies. The best of all worlds!
I’m definitely known for some of my soups and stews recipes. For example, my Instant Pot Lemon Chicken Soup, or my Healing Turmeric Lentil & Farro Soup that literally saved my life as a new mom. Or my Easy Fresh Carrot Soup that comes together quickly and will warm your soul from the inside out. Let’s just say, soups are kinda my thing. You know what else is kinda my thing? Ground turkey. What makes this soup so special, you ask? Well, there’s a few things. One, it’s done is less than 30 minutes. For real, though. Start to finish, in 30 minutes or less, your hot, steaming soup will be on the table. Two, it’s versatile. Use whatever tortellini you like (I used cheese), any veggies you have on hand and make is a spicy or mild as you like! And three, it’s freaking delicious.
Ingredients for Instant Pot Tortellini Soup
- Olive oil – just a splash
- Yellow onion – adds so much flavor
- Ground turkey – you can also use ground beef or chicken
- Salt + pepper – to taste
- Garlic powder – enhances the garlic flavor
- Oregano – adds great flavor
- Carrots – adds color and heartiness
- Garlic – more is more
- Tomato paste – great depth of flavor
- Fire roasted diced tomatoes – you can also use regular diced tomatoes but I love the fire roasted if you can find them
- Low sodium chicken stock – I use low sodium so I can control the amount of salt
- Fresh cheese tortellini – use whatever kind you like
- Coconut milk – make sure to use FULL FAT
- Spinach – fresh is best
- Lemon – brightens all the flavors
- Parmesan cheese – a must for serving
Step-by-step Instructions
This is one of those dishes that you pull out of your back pocket when you don’t have a lot of time but want something that the whole family loves.
Can I use dried tortellini?
Yes, but you will need to cook it for a little but longer under pressure. About half the amount of time it calls for in boiling water. So, if the package calls for boiling the dried tortellini for 12 minutes, you will pressure cook them for 6 minutes.

Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 1 pound ground turkey
- 2 ¼ teaspoons salt
- ½ teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 3 large carrots, diced
- 4 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 (14.5 oz) can fire roasted diced tomatoes
- 2 cups low sodium chicken stock
- 1 (10oz) package of fresh cheese tortellini
- ¾ cup full fat coconut milk (or half and half)
- 2–3 large handful of spinach
- Juice of 1 lemon
- Parmesan cheese
Instructions
Instant Pot Instructions
- Turn on the sauté button on the Instant Pot and let it preheat for 2-3 minutes. Add the oil, onion, ground turkey, 2 teaspoons salt, pepper, garlic powder and oregano. Cook for 3-5 minutes, breaking up the meat while cooking. Add the carrots and garlic and cook for another 1-2 minutes.
- Add the tomato paste, diced tomatoes and chicken stock and stir to combine. Add the tortellini and gently press them down until lightly submerged, do not stir in completely. Press cancel to turn off the sauté function.
- Close the lid and cook on high pressure for 2 minutes. When done cooking, quick release the valve. Open the top and stir in coconut milk, spinach, lemon juice and an extra ¼ teaspoon of salt.
- Serve hot with lots of parmesan cheese sprinkled on top.
Stove Top Instructions
- Preheat a large pot for 1-2 minutes on the stove over medium/high heat. Add the oil, onion, ground turkey, 2 teaspoons salt, pepper, garlic powder and oregano. Cook for 3-5 minutes, breaking up the meat while cooking. Add the carrots and garlic and cook for another 1-2 minutes.
- Add the tomato paste, diced tomatoes and chicken stock and stir to combine. Bring soup to a boil. Once boiling add the tortellini and cook until tortellini cooked through, about 5-7 minutes (check package for cooking time).
- When done cooking, turn off the heat. Stir in coconut milk, spinach, lemon juice and an extra ¼ teaspoon of salt.
- Serve hot with lots of parmesan cheese sprinkled on top.
I love this recipe as it is written, but my most favorite way is to sub Italian sausage for the turkey. It adds a bit more flavor and it’s so yummy! I also baked the gluten free sourdough loaf from Wildgrain to go along with it and it is like a cozy hug in a bowl. 🙂

This was just OK. Would have been better with turkey Italian sausage than ground turkey. This dish is probably better for kids than adults.

Soooo good and came together in no time at all. With 2 littles, that is key. My 3yo is on a soup kick and this was awesome. I immediately forwarded the recipe to family and told them to make this soup asap. It’s hearty, comforting, delicious and easy to make- what a win! This is a regular menu item for us. I’ve tweaked the recipe a bit so that it’s kidney friendly for my husband who is on restricted diet. I eliminate the turkey to lower the protein and eliminate the spinach to lower potassium but substitute zucchini. I use no salt added canned tomatoes, but am generous with oregano and garlic to help give it a little flavor boost. Who says a kidney friendly soup can’t be tasty? It can with Laney’s tortellini soup!

It was a rainy day in Southern California and I thought this would be perfect for dinner! I decided to just make it on the stove since I had a time and it was delicious! Everyone had seconds!
