How To Make Creamy Tortellini Pasta With Ground Turkey

Saute the ingredients: Add a skillet to the stovetop over medium-high heat. Add the oil and onion. Saute for a couple of minutes until the onion begins to soften, then add the garlic and cook for an additional minute to release the flavor.

- 1 (10-12 oz) package of cheese tortellini
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 teaspoon kosher salt
- ¼ teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 (24 oz) jar marinara sauce (I use Rao’s)
- ¼ cup plain full fat Greek yogurt
- 2 large handfuls fresh spinach
- Juice from ½ lemon
- ¼ cup parmesan cheese
Instructions
- Bring a large pot of water to a boil. Once boiling, add 2 tablespoons of salt and add the tortellini. Cook according to the package.
- Meanwhile, preheat a separate large skillet over medium/high heat. Add the oil and onion. Saute for 1-2 minutes. Add the garlic and cook for another minute.
- Add the ground turkey, salt, pepper, garlic powder and paprika. Break up the meat while cooking for 5-6 minutes until meat is cooked through.
- Add the marinara sauce and yogurt and stir to combine. Add the spinach, drained and cooked tortellini and juice from ½ lemon. Toss until spinach has wilted.
- Turn off heat and stir in parmesan cheese. Serve immediately with extra parmesan if desired.
