Ingredients
- 1 (10-12 oz) package of cheese tortelliniΒ
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 teaspoon kosher salt
- ΒΌ teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 (24 oz) jar marinara sauce (I use Raoβs)
- ΒΌ cup plain full fat Greek yogurt
- 2 large handfuls fresh spinach
- Juice from Β½ lemon
- ΒΌ cup parmesan cheese
Instructions
- Bring a large pot of water to a boil. Once boiling, add 2 tablespoons of salt and add the tortellini. Cook according to the package.Β
- Meanwhile, preheat a separate large skillet over medium/high heat. Add the oil and onion. Saute for 1-2 minutes. Add the garlic and cook for another minute.Β
- Add the ground turkey, salt, pepper, garlic powder and paprika. Break up the meat while cooking for 5-6 minutes until meat is cooked through.Β
- Add the marinara sauce and yogurt and stir to combine. Add the spinach, drained and cooked tortellini and juice from Β½ lemon. Toss until spinach has wilted.Β
- Turn off heat and stir in parmesan cheese. Serve immediately with extra parmesan if desired.
I just made this, and we loved it!! Β I had homemade turkey meatballs leftover, so I broke those up for this. I had only frozen spinachβ¦ so I had to make change. Β We will add this to our rotation! Β
