Ingredients

  • 1 (10-12 oz) package of cheese tortelliniΒ 
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon kosher salt
  • ΒΌ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 (24 oz) jar marinara sauce (I use Rao’s)
  • ΒΌ cup plain full fat Greek yogurt
  • 2 large handfuls fresh spinach
  • Juice from Β½ lemon
  • ΒΌ cup parmesan cheese


Instructions

  1. Bring a large pot of water to a boil. Once boiling, add 2 tablespoons of salt and add the tortellini. Cook according to the package.Β 
  2. Meanwhile, preheat a separate large skillet over medium/high heat. Add the oil and onion. Saute for 1-2 minutes. Add the garlic and cook for another minute.Β 
  3. Add the ground turkey, salt, pepper, garlic powder and paprika. Break up the meat while cooking for 5-6 minutes until meat is cooked through.Β 
  4. Add the marinara sauce and yogurt and stir to combine. Add the spinach, drained and cooked tortellini and juice from Β½ lemon. Toss until spinach has wilted.Β 
  5. Turn off heat and stir in parmesan cheese. Serve immediately with extra parmesan if desired.
