One Bowl Banana Bread {Light & Fluffy!)

I’m one of those lucky girls who happens to come from a long line of amazing cooks. Between my mom, grandmothers, aunts, and close family friends, I’ve been set up for success in the kitchen. When I think of my mom in the kitchen, her banana bread always comes to my mind first.
I’m well aware that people have VERY strong opinions about banana bread. Everybody think’s that theirs is the best. Why should you trust me? Just try it first, then you’ll know.

To me, banana bread just isn’t the same without the sweet addition of chocolate chips. It’s kind of like peanut butter and jelly. A peanut butter sandwich on its own is good, don’t get me wrong ~ but adding the jelly just makes your taste buds sing, Halleluuuuuujah!
I’m partial to the mini chips. They’re just so darn cute. And can we take a minute to discuss the sheer volume of mini chips that I have somehow INHALED during the baking process? I really should just buy two bags. One for the recipe, and one to eat while making the recipe. It’s embarrassing. And if you’re a chocolate lover like me, you gotta try my Double Chocolate Banana Bread to satisfy all your chocolate cravings.
Okay, moving on.
My mom makes this rock star banana bread that I have come to make my own. It’s light, fluffy, and just freaking delicious. Every time I eat it, I’m reminded of home. I can eat an entire loaf in one sitting. The recipe is extremely simple and versatile. It also easily makes great muffins. Just bake for 18-20 minutes.
Ingredients you need
- Avocado oil (or any flavorless oil like coconut, or veg oil)
- Sugar
- Eggs
- Milk any kind
- Vanilla extract
- Ripe bananas
- All-purpose flour
- Baking soda
- Baking powder
- Chocolate chips
How to Make Banana Bread
- Preheat oven to 350 degrees. In a large bowl whisk the oil, sugar, and eggs until thoroughly combined and fluffy. Add the milk, vanilla and mashed bananas and whisk well.
- Add the flour, baking soda, and baking powder to the banana mixture and use a rubber spatula to combine. Be careful not to over-mix.
- Fold in chocolate chips. Pour batter equally into two greased standard size loaf pans. Bake for about 45-50 minutes. Cool for 10 minutes in the pan then flip out onto a cooling rack to cool completely.
Can I freeze banana bread?
The short answer is, YES! It freezes really well, and while I guarantee you’ll eat it too fast to have a chance to freeze it, you certainly can. Simply wrap it in plastic wrap or foil then place in a ziplock back to freeze for up to 6 months.
Sometimes (all the time) I eat it too fast and I get this thing my sister and I call “bread throat” where it feels like you have WAY too much bread trying to go down the pipes at one time, and it hurts really, really bad! But oh man, it tastes so good, so you just keep going.
It’s just my fave. Period. The end. And I know it’ll be your fave too.

Notes
This also makes great muffins. Just reduce baking time to 20-25 minutes.

I love this recipe! It’s so easy. My go to banana bread for sure. The only change I make is reducing the baking powder to 1 tsp, as I found the first few times I made it, the bread had a “tinny” taste.

No amount of blending of the 3 ingredients (oil,sugar and eggs) made the mixture ‘light and fluffy’. Only a slurry type mixture. Am I missing something? Also no salt?
No salt needed but feel free to add if you like! And don’t overthink the blending of the ingredients 🙂
Nice recipe . Light and easy to make in one bowl. I cut the sugar to 3/4c and omitted the chocolate chips. I also baked in muffin papers and baked for 20 minutes. Turned out great. Will make again… today!

This is one of my favorite recipes on your site! So easy, quick and comes out perfect every time! I usually made one loaf and a dozen muffins (to freeze). This time I swapped out the choco chips for frozen blueberries and it was PERFECT!

This was easy to make and a hit with my family. I made one loaf and put the remaining batter into a muffin top pan and made 6 muffin tops. Yum!

Hi Laney! I live in Israel where the bananas are smaller than in the US. Any idea how many cups of mashed bananas (approx) the bread needs? I did 3.5 now but seems it may need more. Not sure. It cooked really quickly. Thanks!!
Hmmm, I would actually say less than that! I’ve always done 3 medium to large bananas but maybe you need double the amount?
This has become my go to recipe for banana bread. My family and I love it! Tonight, I tried making it with Barely Barely Low Carb Flour. It cooked much faster, like 30 minutes and the texture is much different. My husband seemed please but now I am making another batch with All-Purpose Flour….. lol! For comparison😏

This is, hands down, the best banana bread recipe. I’m an avid cook and have probably made 30 different recipes over the years and while they’re all fine, this is the one. I’ve taken several different recipes into work to share and this is the only one that gets devoured, and my coworkers ask for the recipe. No, it’s not healthy, yes it has a lot of sugar, and don’t try to change anything about it. One of my coworkers, who I passed the recipe along to, tried cutting back on the sugar and was super disappointed in it. The one thing I do differently, however, is I put a heavy layer of cinnamon sugar on the top before it goes into the oven. It comes out crackly and crunchy on top, and it’s my favorite part. I’ve got another double batch in the oven now, taking to work tomorrow. ♥️

Your recipe was a great scaffolding, with a few tweaks based on necessity or curiosity: less sugar, and more brown than white (next time I’d probably go with your 1 cup), sour cream instead of milk (because I didn’t have milk), some “warm” spices, lemon zest and chia seeds. One loaf (for coach) and 6 big muffins (for daughter and I). Really yummy! I’m also going to try your carrot/banana cake/bread, especially now that my pantry is stocked with “hemp hearts!” Your offerings have inspired me to cook again!

I made this bread because I had a feeling it was going to be amazing and it was SO GOOOD!
I used coconut sugar in place of sugar because I knew I would want to keep eating and eating it and it came out great and still sweet (I would have to make with sugar to tell you whether it tasted way less sweet or not but I love trying coconut sugar in recipes). I actually made half of it in a small bread pan and then the other half in a glass square pan and took them both out at around 35 minutes and was very happy 🙂

This is my favorite banana bread recipe. It’s good every. single. time. I add in a little cinnamon and chopped pecans with a light sprinkle of brown sugar on the top of the loaves to make it extra fancy. Plus, Laney is so good about responding to comments and instagram DMs so it really feels like I’m making a treat for a community (even though I will be eating the whole thing myself)!

This is the ONLY banana bread I will make. I’ve done this as loaves and muffins, and it turns out equally delicious. I make these for my husband to take to work for his staff frequently and they RAVE over them. Last time I made the muffins one woman said she wanted to marry me… So i would say they are pretty great!!
Made this bread today for the first time! Question- I baked it for a the full 50 min and it was still raw and gooey in the middle. I put it back in for longer, and it would not firm up! Now I have it cut up to expose the middle to try to get it cooked. What did I do wrong?! The part that is cooked is absolutely delicious!! I did double the recipe and put it in two large loaf pans and 12 muffins
Doubling the recipe could have been the recipe as it already makes a lot!
This is for sure my go to banana bread recipe! I honestly can’t make it too often because I always overeat it!! I find that 45 minutes is a little too long for my oven, so I bake the loaves around 40 minutes. But yes, sooo sooo good!
My hubs and i have tried different banana bread recipes and none can hold a candle to the LIBAD banana bread recipe. This recipe helped get my family thru quarantine. My 5 year old got to assist in the kitchen which he loved and we all got to inhale the product of our hard work…some delicious banana bread. Only negative is that it’s so darn good i have zero self control when it’s in the house.

I love this recipe. The first time I made it I froze one load and was pleasantly surprised at how good it was after defrosting. I made it today and had both pans stick on the bottom! Wah wah. Next time I think I’ll add a little flour to coat the pan and let it sit for 5 or 10 minutes before removing from the pan.

I can’t tell you how many times I’ve made this since I first came across the recipe last December! It is my go to recipe that I’ve shared with everyone, and I love that it’s easily made dairy free. I always use melted coconut oil and almond milk, and I’ve tried with bread flour and all-purpose and it works great (maybe slightly fluffier with bread flour). I’ve also found my favorite way to bake is in two 8×8 pans for about 22-28 minutes.

Have you ever heard someone say, “I have the best banana bread recipe” so you then will try it out but you come to the conclusion that it tastes just like any other banana bread, because same! Well that is how I felt before trying this recipe. I thought, could this recipe really be any better than my go to recipe or Trader Joe’s box mix (big fan of TJ’s). But I am here to say YES this recipe is better. I am not sure why it is better because there isn’t any crazy methods to it or any random ingredients but it is just SO good. It has quickly grown into a new family favorite. We will now have to get two bundles of bananas, one to eat normally and then the second for banana bread!

So good! I used whole wheat flour and just reduced the amount by a couple tablespoons, and used 3/4 cup sugar which I think I’ll reduce to 1/2 cup next time. I used a mini loaf pan and they are just the cutest most delicious things! What a good recipe and will definitely be my new go-to!

Okay, this recipe is legit. I am (ahem very) picky when it comes to baked goods. This is the best banana bread I have made. Usually the bread is too dense or too sweet or not bananany enough for me. But i have made this twice this week because it’s so good. I made muffins both times for portion control reasons and then freeze and keep them in the freezer. Microwave for 30 seconds and it’s like they’re fresh from the oven. Oh, and add some nuts 😉

Moms best banana bread is 10000000% accurate! I finally had 3 perfectly ripe bananas to make this recipe and it did NOT disappoint. I save tried numerous banana bread recipes and they were always just okay. Laneys recipe is seriously the best. I like to keep my banana bread in the fridge and this bread tastes AMAZING cold! I made one plain and one with pecans and chocolate chips….oh my!!! I find myself snacking on it all day! Do yourself a huge favor and make this!
