Peppery baby arugula, creamy burrata, sweet peaches and salty prosciutto just might be the MOST perfect combination. I already know I’ll be eating this salad all summer long, starting with Memorial Day! Peach, Burrata, Prosciutto, & Arugula Salad is as tasty as it is colorful, and with this blend of salty, sweet, and savory, you’ll be craving it even after the last bite is gone. IT’S SO GOOD!
Ingredients in Peach, Burrata, Prosciutto, & Arugula Salad
This really is the dream team of flavors and textures.
- Baby Arugula – This is the foundation for the salad! I love the peppery, slightly spicy taste of arugula, but I know it isn’t for everyone. You could substitute spinach or even a spring mix!
- Peaches – Is there anything better than juicy, bright peaches? Any summer or stone fruit would be great here, too. Plums, nectarines, figs, strawberries…just add some sweetness!
- Burrata – One of my favorite cheeses! If you can’t find burrata, try some fresh mozzarella instead.
- Prosciutto – You can leave this out for a delicious vegetarian salad, but my family loves the saltiness some good prosciutto adds! It also makes this a hearty meal salad instead of just a side.
My Easy Maple Balsamic Dressing is the perfect finishing drizzle for this bomb salad. It adds a little sweetness that ties everything together so well! If you aren’t making salad dressing at home already, I highly recommend you give it a try. It’s SO easy and really elevates your homemade salad game!

Description

Ingredients
- 4–5 handfuls of baby arugula
- 8 ounces burrata
- 1–2 peaches, sliced in thick wedges
- 4–5 slices prosciutto
Maple Balsamic Dressing
- 2 tablespoons balsamic vinegar
- 1 teaspoon dijon mustard
- 1–1.5 teaspoons pure maple syrup
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- squeeze of fresh lemon juice
Instructions
- Add the arugula to a large platter or bowl. Tear apart the burrata and scatter on top of the arugula.
- Add the peaches. Tear the prosciutto and add on top.
- Whisk together the ingredients for the dressing and drizzle on top of the salad. Serve and enjoy.
I never leave reviews for recipes online. This is worth the review. One of the best salads I have ever had. I want to bathe in the dressing it is so delicious. I am allergic to pork so I swapped the prosciutto for pistachios, but I bet it’s even better with the prosciutto.

Not a fan of mustard so I left it out and the dressing was still very tasty.
