Roasted Red Pepper Hummus

You can make homemade hummus.
Recently, my kid went on a hunger strike for like a week, and for some reason the ONLY thing she would eat was roasted red pepper hummus from Trader Joes.
Okaaaaaaaaay then. After she polished off the container with a spoon I decided to make my own and see if that worked.
It did. And the hunger strike is finally over. (Plus, I think those teeth finally broke through).
I don’t promise to fix all of your kids’ poor eating habits with this recipe, but I do promise that it’s quick, easy, and delish.
It’s great to put out for a summer get together by the pool with pits chips and veggies, or if you’re my kid, just grab a spoon.
Roasted Red Pepper Hummus

Description
This 10 minute roasted red pepper hummus will be your new favorite appetizer.
Ingredients
- 2 cans garbanzo beans (drained and rinsed)
- 1 12 oz jar roasted red peppers, drained
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1 teaspoon salt
- 1/4 cup olive oil
Instructions
- Place all the ingredients into a food processor and blend until smooth and creamy. Serve with pita chips or fresh veggies and enjoy!
